Pasta bake (with odds and ends vegetables)

This pasta bake will help you to use up vegetable odds and ends such as peppers, onions, courgettes, tomatoes etc. It’s different every time depending what needs using up in the fridge! 

Crispy pasta bake


  • Vegetables (e.g. peppers, onions, courgettes, tomatoes) 
  • Mixed herbs 
  • Garlic 
  • Stock 
  • Cooked mince / bacon / chicken / tuna / Quorn 
  • Firm cooked pasta (handful for each person) 


  1. Preheat oven to 200c 
  2. Cook leftover vegetables until soft with herbs, garlic and a little stock
  3. Add mince/bacon/chicken etc. and add a handful of firm cooked pasta per person
  4. Top the bake with an easy white sauce with a little mustard and cheese – you can use up milk near the date and pre-whizzed frozen breadcrumbs (optional)
  5. Bake in the oven for around half an hour 
  6. Serve with vegetables and garlic bread
