Bread pudding

The Leicestershire resident who sent in this recipe said, ‘My mum and nanna have always made bread pudding to use up stale bread. My mum freezes the bread until she has enough to make an enormous batch and then when cooked, cuts it up into individual pieces to use in packed lunches etc. The below info is to make a little one.’    

Bread pudding in a ceramic dish

Ingredients 

  • 225g stale bread 
  • 90g dried fruit 
  • 55g margarine 
  • 55g sugar 
  • 1 tbsp black treacle 
  • 1 egg 
  • 1 tsp mixed spice 
  • 1 tsp ground ginger 
  • ½ tsp bicarbonate of soda 

Method 

  1. Rip bread into small pieces, soak in enough water to dampen down the bread for 30 minutes 
  2. Drain and then squeeze the bread – beat with a fork to remove lumps 
  3. Melt margarine and treacle together, then beat into the bread mixture 
  4. Add dried fruit, sugar, mixed spice, ground ginger and mix it all together 
  5. Beat egg and bicarbonate of soda together and mix into the bread mixture 
  6. Turn into a greased dish, bake on gas mark 4 for 1 hour until the top is crusty 
  7. Enjoy!
